Jalapeno Cheese Bread (with mistakes)
Hi friends,
I baked some jalapeno cheese bread today BUT not everything went to plan.
So I mixed the cheese, salt, and bread flour.. but then realized I didn't have enough jalapeno from my aerogarden. BUT I did have some green chilis that are used for the indian cooking. Now, I proofed the mixture for 2 hours totally fine. Folded the dough over itself and now it was time for the 30 minute proof. Usually I do this while the oven is preheating and just put the bowl on top of the oven. BUT we decided to get boba during this time so I put it in the oven on the proof setting and I put a timer for 30 minutes (but did not realize it wasnt the cook timer). So the dough kept proofing after the alarm went off. :( So I came back home to a very very proofed dough. It maybe almost tripled in size, which is NOT what you want

So as you can see, it is a big, flat boy. When it came out of the oven it was huge, and had a lot of air, but as it cooled it completely deflated. In turn, it became a lot more chewy than expected.
All in all, not terrible. But will definitely be very careful with proofing times going forward.
